Keith Goode does not hedge. Ask him where to get the best coffee around Austin and he points you to Coffee Enlightenment, tucked into a suite at 115 Sundance Parkway, next to the Lowe's off I-35 in Round Rock. The tagline on the door reads “Awaken your Senses,” and after a cup it scans less like a slogan than a fair warning.

Luis knows the coffees

Behind the roaster is Luis, who grew up in the mountains of Colombia and carries that country's coffee the way other people carry a hometown accent. He roasts the beans himself. Ask what a Colombian washed lot does that a Costa Rican honey process won't, and he will tell you, at length, and you should let him. The whole place is built around that knowledge rather than around a to-go line.

Why the siphon

Siphon coffee — vacuum coffee, the method Japanese cafés turned into a craft — looks like lab glassware and tastes like the cleanest cup you have had. Water heats in a lower globe, vapor pressure drives it up through the grounds, and when the flame comes off it drops back down through a cloth filter under vacuum. No paper to flatten it, no drip basket to muddy it. What lands in the glass is bright, tea-clear, and a little startling the first time. That is what Keith means when he calls it the best way to drink what Luis roasts.
